Additional question: I am noticing that when someone RSVPs and chooses to pay by check, the notification is NOT being sent. I thought the condition that sends an email for credit card payments only over rides the email notification IF the person pays by credit card and under all other circumstances the emails set up in the email tab will get sent. Is that not the case? Is the auto-responder also not getting sent?

I am noticing that when someone RSVPs and chooses to pay by check, the notification is NOT being sent. — It is because you have set a condition for your email notification. That particular notification will only send if payment method is equal to credit card.
You can create a separate notification for "Pay by check" option. Let us know if you have any questions or if you need further assistance.

oh. I thought that the condition was then an exception to what’s listed in the email tab. So once a condition is created I need to create another one for checks? Is the auto responder still being sent or does the one condition below override that as well?

If you will add a condition for emails, then it will be applied to the email notification. Autoresponder does not have any condition applied to it. So it will be sent to all the users who fill the form irrespective to the method of payment selected.
You will have to add a new condition as suggested by my colleague if you want the notifications in other cases as well.
