Have a few company's I am creating sites for. How do I assign different email addresses to each form?

When you create each form, you can select "Email Alerts" under "Setup & Embed" for each form. Then select "Add New Email", which you can then further narrow down to either Notification Email or Autoresponder Email. From there, you can customize each form's email address.
