How do I set up multiple chice instead of one.

You would need to replace it for a Multiple Choice field. It appears that you have already received submissions, so to avoid losing the data you have collected through that field already, you may hide it: https://www.jotform.com/help/434-How-to-Hide-Form-Fields, and then add the Multiple Choice field where you will label it the same, and add the same options.
