I`m trying to create a complex order form where one choice allows for other choices of options available (each with their own prices)
eg. Product A might have options D,E Product B might have options F,G,H and Product C might have options I,J,K,L. Each product has a base price and each option has their own prices.
Do any of the payment tools do this kind of thing.
I have built the question structure but now want to add pricing and can`t see how to accomplish it.

Adding a quantity to your product fields is possble. Note that this can only be achieved using any Payment Tools.
To add quantity, click on “Add New Option" while you are on the Product Wizard.
For example, if you are selling a t-shirt, you can ask users to select quantity, t-shirt size and color.

The Purchase Order sort of gets me closer but I'd like certain options only to be visible with their price depending on a previous selection...
An example could be if the customer chose Adult Clothes then only sizes for adults are available. If they chose Children's Clothes then only children sizes available. And the prices may be different for each size....this is just an example, not my real problem, but it illustrates it well.
Can I keep the Purchase Order Hidden but fill it in based on answers to questions?...then reveal the PO when it is complete?

The only way to achieve that is to use Hide/Show Conditional Logic on Forms. When certain conditions is met, you can "show the purchase order field". Though, this doesn't function according to your example, that's not possible with the JotForm Builder yet.
Here's a visual guide on how to access Hide/Show Condition.
Also, note that you can only use 1 Payment Tool per form. We do not support Multiple Payment Tools as of the moment.
