For example. I have a form which is a test that should be completed by the student. Afterwards Can I make evaluation in the form itself? Like in Google forms?

Yes, you can edit submissions made on your forms.
After logging in to your account, simply click and select the form you would like to edit on your My Forms page. Then click the Submissions button at the top.
If you are using the New Version, Sheets of the Submissions Page, select the form you want to edit and then click on the Three Dots and Edit Submission.
If you are using the Old Version of the Submissions Page, scroll down and search for the submission that you'd like the edit or evaluate, in your case. You can use the search bar at the bottom of the table. For example, looking for the entry submitted by "Randy Smith"
Click the entry you'd like to edit, which brings it up in the main view at the top. Click the EDIT button on the top right corner.
Once you do that, you can update the form as you would like. You can add new fields for your evaluation. And after you're done with the evaluation, don't forget to click the Submit button.

No I don;t mean editing. I mean evaluation that would be summarized afterwards somewhere and I will get the total score of the submitted answers.

You can try using the quiz app, it will show you the total correct answer over the total number of question. It will also show you the percentage of the correct answer.
