I'm using your form as a registration for our workshops, Is there a setting I can use to set up a confirmation email to the person registering, as well as an original email to me for the registration.

Yes you can easily set up and auto responder email for your form, as well as a regular notification email. Open the form in the form builder and click the Email Alerts button at the top of the page. You'll see another button appear which will allow you to "Add New Email". Select the Auto Responder option and then just set it up like a regular notification.

Yes you can do this, Click on the Setup and Embed tab then select the Email Alerts icon. You then need to click on 'Add New Email'. You'll then see links to open two wizards, the first one Notfication Email, will guide you through setting up the email that is sent to you when someone fills in the form, the second option, Autoresponder Email, is for setting up an email that will be sent to the person who filled out the form.
