The email subject is not getting updated.

I changed my form title to 'Winter Workshops' but bookings still come through titled 'Summer Workshops.

On checking the server logs, I noticed that the subject title was "Summer workshop"

but from your email settings, it seems you have updated the subject already. Please let us know if you are still experiencing the issue.

If you are still experiencing the issue please delete the existing email and then create another one. It is possible that there can be cache issue in the Form.
