I am testing out the free version in hopes to sign up for the paid HIPAA compliant version. I noticed that when a form is filled out it gets emailed to me. We do not have a secure server. Is this the same process in the HIPAA version?

Yes you can configure notification email alert in HIPAA complaint form and you will receive notification emails without any problem. It's just that if the question in your form is protected, the data will not be included in the email. Only the unprotected field's data will be included in email alert.
