There are a few ways to do that. However, before we deal with your forms, one way to attract spam is to post your email address in a non-private thread, without any obfuscation, such as you have done above! (I'll fix that shortly.)
Okay, as far as your forms are concerned, you could use a Captcha and/or setup a strict or loose check, and/or set the email field to only accept one entry from each email. Which is to say that if an address was already submitted in a particular form's email field, it can't be used for that form again, regardless of cookie or IP address:
(It's my understanding that we're still tweaking this option but you can still give it a try.)
