I discovered that the new Airtable integration doesn't allow us to use the dynamic dropdown field type. Is there a workaround for this? I only really need the output of the field to be the thing selected on the last level of the dropdown options (eg violin, piano, guitar) single value.

Unfortunately, Airtable integration accepts only these fields:
And I believe that's a limitation from Airtable.

Right, what I was wanting to know is whether there's a way on the JotForm side to convert the field values from the dynamic dropdown into a single text field I can then use to map to Airtable. Any way to do this using calculated fields or something else?

You can try using Short text field and conditional logic:
