The employee who set up our Jot Form account is no longer with our company. We need to have him and his email address removed and assign another user to primary. How do we handle that without losing all of the forms we currently have?

You simply need to go into your account settings and change the email address.
Click on this link https://www.jotform.com/myaccount/profile - There you need to click on "edit" to change the registered email address.
