I want to change my user name to my companies name, primarily so that my own name doesn't appear in the form link when I publish it.

It seems that when you want to create a custom URL you can only change the last part of the URL and your username will still be included, is this correct?

Yes, when you create a custom URL, your username will be shown on the URL. The form ID number will be replaced by the username and the form name as explained in the guide above.
