It seems that the posted concern is incomplete. Please respond to this thread with the complete details on how you want your Banquet Form to work with the payment and total headcount.

Assuming that this is the form you are working on 92850765914164, you can add a payment field then trigger its visibility in the form using Show/Hide Field condition.

Let say using a Single choice field which asks the payment method preferred, when an option to pay via the payment integration is selected, the payment field will be shown. Here's a demo form to better illustrate the idea (I used PayPal Checkout for this form):

The form I created is to get a total RSVP headcount view for a dinner
party. I need to see the total count attending.
What is different is that the cost is $30 / person attending, except it is
free for cheerleaders, Team manager and MP board members.
I need the headcount total but an adjusted $ amount due.
The payment will be collected by check or quick pay.
