I have a service that requires the form to collect some very personal and perhaps damaging information about my visitors! Your form does not allow me to have that sent directly to MY email without passing through you, correct?
How do I know that you're not collecting that information that is sent via your form that I created with your JotForm online service?
How do I know that the information is not being used you to solicit the visitors to my website, tracking them, selling the information and/or possibly using the information against them when they fill out and submit the form?
What if I don't want to use the Email address that I used for the form creation? Can I change that in the form without creating a whole new one?
Would appreciate some insite on these questions.

You can change the form notification email in your form anytime. A guided instruction can be found on this link on how to setup different notification email aside from your account email address.
