You were right. I can see that some fields' value is not included in the email.
Could you please try creating a new email notification then make a test submission? See if it will resolve it.
Please try that and let me know if the issue still persists after doing so.

As for the excel download, I see you have a separate ticket for that. It's currently assigned to our backend team. If we have an update, you should receive a reply from our developers on that thread.
