Let's say I have a multiple choice or single choice field.

The options are:

a. I am shorter than 5'9

b. I am taller than 5'9

But in the saved data, I merely want it to be recorded as either

a. short

b. tall

Is there any way to display one set of text to the user, but another in the actual recorded data?

Yes, it is possible.

You can put in a hidden field for example Height and put in the condition as below:

In a similar manner add a condition for second answer as well.
