For example, I have just sent through a test to check that the system is working. It has just arrived in JotForm with the 16 May as the date, however todays date is the 17 May. Why would this be happening?

Please check your Time Zone Settings from My Account - Settings page (https://www.jotform.com/myaccount/settings).
