I simply want to change the header text color of the Pastel layout from Orange to cyan, how do I do it?

Thank you for posting your question here. There are two ways to change the header text's color:
a.) Inject a custom CSS
Click the Preferences button found under the Setup & Embed tab of your toolbar. Once the Preferences dialog box opens, go to Form Styles tab and paste the following CSS in the Inject Custom CSS field:
b.) Insert HTML code in Header Properties
Open the Header Properties dialog box by clicking the small gear icon found at the upper right corner of the header field. Then insert the following HTML code in the Text field (before and after the Header text):
<font color=cyan>HEADER TEXT HERE</font>

Great info! i had the same question. Is there anywhere where all the styles/class names are listed?

While listing all of the possible CSS combinations might be impractical, having a readily accessible reference containing the most commonly requested styles would certainly be useful. Although I believe this has been previously suggested, there's no harm in raising the issue again.
