Is it possible to create an hidden radio button control?
have seen there are some hidden controls, so I guess there's a way to set the property "hidden), but can't find a way to make a radio button hidden.
That would be very useful to set a value on the submitted forms (such as "paid/not paid")

You might want to take a look at this guide on how to assign a status to a form: http://www.jotform.com/help/194-How-to-assign-a-Status-to-Submissions
Let us know if this guide does not help you to accomplish what you are trying to have in the form.

Thank you very much, that's exactly how I've set the form until now.
The radio button would be faster as I should only click to set the status as "paid" instead of having to write it manually.
