the form eeps sending email to 'email@example.com' eventhough i have changed it. Please help.

That's how it works. "Test Email" will only send a test submission to the email address associated with your account.
To test it properly, you have to make an actual submissions with your form.

Looks like you are clicking on "Test Email" button of your notification alert. "Test Email" button sends email to your account email address and not to the Recipient email of your notification. Thats how its designed to test the email content.
You can quickly click on the preview button of your form and submit the data to test the newly added notification,
