I'd like to only specify a date range in the date/time field to pop-up in the calendar. (i.e. September 27, 2013 through October 2, 2013. Is this possible?

As is now, you cannot customize the date/time field within the form builder. You can do it by using the form's source code (you will have to manually alter the content of the field in the calendar.js file).
Alternatively, you can also use the technique describe on this guide How-to-Add-a-Time-Only-Field.
Instead of time, put your required date range instead in the drop down lists.
I usually use spreadsheets to easily create this date ranges, then, I just copy/paste the selections to the drop down list option in the form
So, in your form you can apply the 2nd option I mentioned, and just complement it with Time field so there is Date and Time field in your form instead of the Date/Time field.
