If you are referring to the email used to send emails for assigning the forms, you are not able to modify this sender email. This email will always be noreply@jotform.com.
If you are referring to Notification or Autoresponder email, you can edit the email by opening the settings first:
From the Advanced tab, you will be able to update sender email, or set up custom SMTP:
