I was wondering if there was a way in Jotform to create a matrix but instead of having radio buttons a person could fill in information, much like an excel file

Using Matrix field, you can change the input type from Radio Buttons to Text Box.

Thanks so much! The only other issue is that I need there to be a drop down box and a text box in the same matrix, is this possible? Also is there any way to get responses to show up on a google spreadsheet? Thanks again

Hi, Unfortunately it is not possible to use both text box and dropdown box in the same matrix.
Regarding Google Spreadsheet: We have a feature called Google Spreadsheet Integration. Please refer this guide for how to integrate your form with Google Spreadheet.
