I recently became aware that you have changed the way email notifications and auto responders work.
In attempting to get my forms that have worked faultlessly for years to work with the latest system I have trashed the email part so it is useless- the auto save kicked in.
I there any way I can return to the original forms, ie pre July 28th edits?

Unfortunately there is no way to revert back your form from its previous state. I would suggest creating a clone of your form before making changes to it for back up purposes. Another suggestion would be to disabled the form autosave.
The notification changes that was made is to allow the use of SMTP . The notification issue could be resolve however by simply changing the sender email to email@example.com although If the user intends to use a custom email address, the user will need to use the SMTP.

Normally, I would create a clone, however, might I suggest the disable Auto Save option might be a bit more visible.
