How can I select email field as the From Address?

I agree with most others on this. I have clients who have 50-150 users in the company. We relied solely upon the "from" email address being the individual user. We take the Jotform notification and have it automatically inserted into our I.T. service request system. This would tie the ticket to the user. Now we cannot do this without manually entering every user and having every user forward us a validation code. We will likely use another form company or just host one ourselves unless this is changed.

Hi,
Good day! We have actually restored the functionality to select the "FROM" address using a custom domain or from your Form Email Field but you have to setup SMTP through Mandrill. Here's how: Send Form Emails From Your Own Email Address: Jotform Now Support SMTP
After setting up SMTP from Mandrill, you will see the From section and you can select the Email Field. See screenshot for example output:
