Are the email notifications with form information encrypted and decrypted automatically?
If not, how do I get notification of new form submission without the form information being transmitted? Logging into JotForms is easy for security purposes if necessary.

The information being sent through email is not encrypted. On your email notification you can edit which data you want sent over to your email address. What you can do in this case, is to remove all the sentive data related fields from your email notification.
Below I'm pating a screenshot of the Email Notification window:
As you can see below you can fully customize the notification email to your needs. Here you can add or remove unwanted fields on your email alert. Also you can add additional text or images if wanted.
As recap, this option is located under Email Alerts on the top toolbar of the edit forms window.
