We set up a form onour web and noticed that the submissions were not going to the right email address so we don't know if anything was submitted. Is there anyway you can tell?

No matter what email you've entered in your form notification, right or wrong, a copy of submissions would always land in your form submissions page.
You can find all submissions there. Just look for the submissions that was not submitted to your email.
