We have "firstname.lastname@example.org" as the default sender for email notifications, but that email address is no longer valid. How can I change it?

You can change the default sender email from your user account setting:
1 - Click on the user Icon at the right-top of the screen, select "account".
2 - Click on "Settings" tab.
3 - Change "Sender Emails" option.
