Is there a code that we can use so that when submissions arrive in our inbox we can reply directly without copy and paste?
That way whey I hit reply in my gmail it goes to whoever sent the submission instead of firstname.lastname@example.org.

Email Alerts on top of form page
Click on Reply to and Receipent settings
Then click on Reply to email and choose your customers email field.

as five town hoop dreams have advised, you should map your form email input field to your "Reply-to" email notification option.
From your form builder:
1 - Select "Setup & Embed" tab
2 - Click on "Email Alerts" icon
3 - Select you email notification from the list.
4 - Click on "Reply to and recipient settings"
5 - Change the "Reply to Email" option to the email field
