Is there a way to be able to see a "total" of the input data for the forms I've created BEFORE the person entering the form hits the submit button?
Also, Is there a way to have Jotform keep track of stock on hand? For example, if I have 4 pies in stock and people request 2 of them, will Jot form change the in-stock amount shown on the order form?

Regarding your first question, it is possible but will require a bit of rework: https://www.jotform.com/help/275-how-to-pass-a-calculation-to-a-payment-field. But please note that if you choose to accept the payments online directly, the total amount will be displayed automatically.
For keeping track of your stock, I can only recommend our Inventory widget: https://eu.jotform.com/widgets/inventory
