I would like to use the single subfields

How can I use the single sub-fields of a field? Such as First Name and Surname out of the Fullname field or the single lines of the address field.

You can use the Single Entry field and just label it with Full Name.

I would like to use existing fields but have the entries separate as they are entered.
So using the field fullname which consists of Surname and First Name. But use the results in two variables which I can allocate to the fields in my receiving system. E.g. outlook via Zapier
separating the fields manually would make the forms much less userfriendly

You can access the sub-fields in paragraph elements by placing a colon after the field followed by the sub-field.

{field:subfield}

In your case: {name:first}
