Here's my issue:
I created an auto-responder email and pressed the "Test" button and successfully received the correct email.
I pressed finish and saved the form.
When I go back into the email, it has reset itself back to the default grid with questions and answers.
I have successfully completely this process on a different form but on another form it does not work.

What is the URL of the form in question? Let us know so we can check it for you. Do you have a customization made to the email body? You may try this, clone the form and do the changes to the clone version. See if you still can't save the changes to clone form. How to clone an embedded form from a webpage?

I've cleared your forms cache, please create the autoresponder email again. I hope this helps.
