I have been told by PayPal that I need a seperate account to process receipts from my form. I have set up this account but I need for payments to go to this new account. I, therefore need to change the default email address on my form. Is that possible. Thanks

Yes, that's possible. You can change the form recipient email by following this guide: Finding out E-Mail Address Used for Submission Notifications.
