I want my customer to have an email summary of what they ordered - can't figure out to how to set it up.
Should it be through Pay Pal after they pay?

You can do that by Creating a Form Autoresponder
You can customize the autogenerated table. Or just can set a custom message in the Subject or add a few field variables along with your own custom phrases in the Email body
