With the data gathered from our forms is it possible for JotForm to perform splits in it's reporting? Say if I created a survey and I wanted to split the data out by how many males answered each question and the same for females? Does that make sense? I'd like to be able to do this without taking the JotForm data into a third party app or doing it by hand in Excel.

That's possible when you create a graph report using the visual report builder. Have you tried this already? Here's a guide: http://www.jotform.com/help/187-How-to-create-a-Visual-Reports-with-your-Form-Submissions. You can create charts out of form submissions.
However, if what you mean is to split the data on the submissions data grid, unfortunately that's not possible. You should consider Excel in this case or you can integrate your form to Google Spreadsheet so you can customize it further.
