You can always edit your form no matter which embed code you have used the only difference with embedding the form using the source code is that once you made an update tp your Jotform.com account you have to re-embed the full source code but other embed codes automatically updates your forms in your website.
You may want to look into this guide about which embed code to use http://www.jotform.com/help/67-Which-Form-Embed-Code-Should-I-Use.

Yes that is correct. That applies if you use the source code method but for regular embed code once you made any changes it would be automatically updated in your website meaning to say you only have to embed the code once if your not using the form source.
