..and yes, I've tried doing a test email in 'Live' (preview) mode so it ought to send to the specified addresses rather than the default email. No dice. Is this a site-wide issue or have I missed something?
Also, the submit button seems to have disappeared from my form. It's visible in the editor and the preview, but is not appearing on our website.

Fixed the submit button - my iframe wasn't tall enough :)
But emails still aren't working and that's a big problem :(

I checked the mail logs on our servers, and found that at least one email went out:

Have you checked your hotmail spam folder?
We can confirm that the email did not bounce.
Also, on paypal forms (I presume we are referring to the 'Buy Tickets Form'), the emails will not come through unless a payment is completed.
If you want the emails to be sent regardless of the payment being incomplete, activate the feature as shown below:
If you want to leave the feature deactivated, you can view unpaid submissions as shown below:
