Can jotform be used with Salesforce if Salesforce Shield is turned on to encrypt the data at rest?

According to our HIPAA page, it would work (https://www.jotform.com/hipaa/is-hipaa-compliant/salesforce/) as the encryption happens on salesforce side and we would just send the data towards SalesForce.
