My form includes multiple purchasing options, which requires the view of a final subtotal based on what is being purchased in order to see the total amount owed. How can people who are using my form but are paying by check or over the phone be able to see what their sub-total is for the amount they owe and still submit their form if not paying with a credit card?

Thanks for asking. If I understand the question correctly, you can use the Purchase Order tool for that:
Just follow the steps in the wizard that pops up after inserting it. One of those steps would be to check Show total on the form:Another way to have the total displayed is to click the inserted purchase order field and then click the Show Total button on the Properties tab at the top of the form builder:

I would have realized what you were really asking about. (I've changed this thread's title to make your request clearer. Although, I guess it was pretty clear to begin with!)
Now to my real answer. To my knowledge, there's no way to accomplish that in the form builder. However, it may be possible to write a script to display the total, both on the form and in the autoresponse received by the user. An extra element (most likely, a text box set to read-only) would need to be added to the form to display the total but since custom scripts can't be inserted in the form builder, the form's full source (see this guide) would need to be embedded in a web page (a web page not on our domain) and the script inserted there.
I'll see if I can come up with such a script but it may take some time. How much time? Kinda hard to tell at this point but I'll keep you updated.

I just ended up using the Purchase Order and adding in a button in a different module for Paypal that they can click if they wanted to pay by credit card.
