When setting up email notifcaitons I am not being given the option from the down menu to select recipiant E Mail just no reyply options. And this is not what is shown in your so called Helpful videos linked to your youtube. Perhaps these need updating and by someone who can give clear instructions instead of fast point and click rushing through. If I can't get the recipiants email then how am I going to be able to respond back?

after you have created a notification go to the email alerts option, click on notifications. There you can edit the tempelate of what will be sent to you as a notification. In the same window you can find list of fields beside... click on the email field.

I have used Jot Forms in the past with a different account and well versed in how to edit the template and all the fileds are included as those in the form ready set up. And have never had to further edit the form fields in the template. That was not what I was asking.
My question was concerning the drop down options when on the first part of setting up the notification Email. I have Field Name, Email and Message in my form. And again the first option selected on the setting up of the notifiction is Name. The dropdown menu for Sender only gives me the option for email@example.com or firstname.lastname@example.org. Not as shown in the Video tutorial Email. And your suggestions are of no help. Perhaps it would be best if I now find another site that provides a similar service with better support? As I am getting no where with this form and needed to get it up and running for my business.

To be able to use custom e-mail address(aside from email@example.com) in Sender E-mail box, you have to authenticate first your custom e-mail address.
Please refer to this guide -How-to-Add-a-Custom-Sender-Address-to-an-Email-Alert
Another option is to use Mandrill service -How-to-use-Mandrill-to-Send-Emails-From-Your-Own-Email-Address
Hope this help. Inform us if you need further assistance.

is the option sender email address in the email notifcaiton I'm sent going to be mine or that of the person who filled in the contact form? Question to the person who sent me the details of How to Add a Custom Sender Address to an Email.

The option Sender Email Address is the Email addressed that will be used to send out the email notification to the recipient Email Address, genrally the Sender Email Address used is firstname.lastname@example.org.
The user's email who submitted the form. Will be inside the email notification.
