I can have clients email video files to me directly, but when they upload it with our form (Submit a Video) the .MOV wont play on the computer once downloaded. Is this a form of encryption from Jotform? Is there a workaround?

No, we do not modify the uploaded files. In your screenshot, it shows that the video player you're using isn't capable of playing the video due to its codec requirement that is not supported by the video player. I would suggest downloading a better video player that plays all video types, I can recommend VLC player https://www.videolan.org/vlc/. It's free and open source. It's the best one on the internet. :)
