i have a notification of completion to a form send to my preferred email.
i would like to change it to firstname.lastname@example.org
Could you kindly let me know if it's possible.
i tried changing a few times and even if i have already manually changed it, it goes back to the email that i initially put it.
please see if you could do something about it.

Yes that is possible. To change the email address which is used to receive submission emails, you should actually change the "Recipient Email" address of your form's notification email alert.

I did check your form's notification email alert and I found that you have added two email alert. Please check the screenshot below:
One is sending submission emails to "email@example.com" and the other one is sending to "firstname.lastname@example.org"
You can check the above guide and change the "Recipient Email" to any desired email address.

I can confirm that both notifications has the same email recipient "email@example.com".
Note that you have to make an actual submissions with your form to test. The "Test Email" button on the notification wizard will only send a test notification to your account email address not with the notification's email addresses. You have to fill your form and submit, you should get notifications on firstname.lastname@example.org email.
