I'm mapping fields to Zoho using the integration tool, but all of the fields aren't showing up in the drop down. I have confirmed that these are text fields in Zoho and in jotform.

I cloned your form here and it seems all the text fields appears on the list except the widget fields. Note that widgets can't be mapped on the integrations as of the moment. It is not yet supported as far as I know.
Can you please tell us what text fields (except widgets) that doesn't appear on the dropdown list? Have you also tried re-integrating your form with browser's cache cleared to check if this pulled out the missing text fields? If not, please try and check it again.

It's not the form fields that are missing, it's the Zoho fields.

Can you please explain which Zoho CRM fields are missing when you integrate your form? I did check your form and found that few form fields are not mapped with Zoho field and they are not missing. Please check the screenshot below:
