We are struggling to pass a field that is on our form (TOTAL) to the Paypal API connector. How do we do this? It appears that the connector wants to have a separate field which is not the process we want to use. We are calculating a total in the form itself (that code is working correctly), but we would like to pass that data for Paypal to use for the total the customer should pay.

Are you using Paypal under Payment Tools? We have Paypal payment tool available that is passing all the product info, prices and total on the Paypal checkout page without the need to create a custom code. Check this guide to understand more about Paypal Forms.

I'm not sure you understood the question. What we are trying to do is transfer a total from a field on our form to the total in the paypal intergration field form.

Let me inform you that the only way to populate a total number from one regular field to the Paypal total field is by using custom code/script. That can be accomplish by using the Source Code of the form, here is how to get it: How to get your form source code
Otherwise, you will need to let the Paypal integration to make the calculation by itself and adding all the options to your products according to this guide: How to add options in the payment forms
