I don't want to receive an email every time a record is submitted. I just want to log in and see the compiled data when I need it.

You can turn off email alerts by deleting them while editing the form.
Click Setup & Embed tab > Email Alerts > Notification 1
Then, in the Compose Email screen, click Delete Email
That should delete the notification email and prevent your form from sending you a message each time you receive a submission.
