Also, we are trying to set up payment options (linked to Square) and want to allow for submission with or without payment. If the product is selected, but credit card info is not entered, the form will not submit. How can we update this? We would like to allow submission without payment in addition to submitting with a credit card.

Thank you for reaching out to Jotform Support. It is possible to make your Payment field required. This can be done enabling the Required option of the Product List element. Below is a step-by-step guide and screencast explaining how to do this:
