Here's what I want to do:
I photograph a large basketball league.
I want to create a line by line photo schedule, then allow coaches to go to the form, pick their shoot time, and save. (each shoot time will be on it's own line).
I want the form to immediately update with the coach's selection, so that no one else can select it. I hope that makes sense. -

I think what you can use is the Gift Registry Widget. http://widgets.jotform.com/widget/gift_registry

This widget will allow you to have items(in your case schedule items) in your jotform that have Quantity option.
What you can do is assign a single (1) Quantity only for each schedule/item. So, whenever a form respondent select an item/schedule, the quantity remaining will become zero(0) -- so other user will not be able to use that item/schedule anymore.
