I like to know if it is possible to pre fill a value in a text element.
For example I like to make a text above the form like "This is the order form for product [product_name]".
Then I want to prepopulate it's value with via URL parameters. For example: http://www.jotform.com/form/10565343954?product_name=product1

I guess you are looking for our hint option, in input boxes, you can edit hints as far as you want to. First click properties gear and select properties
secondly write down the hint that you would like to add to your input fields.

No sorry, I am talking about a text element and not about text box element. So a pre filled value in plain text. Like in the example above.

it is possible to prefill the src of the image in the header element and all values between brackets in the header element and in the text element.

I will try cover both forms that you have added in this thread.
Can some fields be pre-populated / pre-filled - yes, they can.
Unfortunately not all fields can be pre-populated only some and those are the ones that have the name attribute associated with them.
Now the first jotform from above:
You can prepopulate all of its fields like so:
Now the second jotform that you gave a link to has fields that can not be populated entirely..
Usually when you pre-populate the fields, you can only change the values. When a text box has some value, it is shown by text being visible in the box, a similar thing applies with radio options and checkboxes.
I hope that this gives you a better insight what can be prepopulated and what can not.
If you tell us what you would like to achieve we might be able to offer you guidance in what you could do.
For example, the image can be set to be requested from a link, which if on your server could display different images depending on the season.
