For example, in my form, date of birth for each registrant is required. Sometimes people make a mistake and ask me to change it for them. However, when I try to edit the result, I can't find a way to save without paying again and resubmitting the form. Is there a way around that?

I have understood the issue you are having. You are unable to edit any of your submission because the Strip question you have in your form is expecting valid credit card details.
I did try few options to hide the payment question in edit mode but it does not seems to work. Let me report it to our back end team. We will get back to you as soon as we have any update from them.
