I'm trying to use a image checkboxes widget and get it to show up in the email notification but it won't show up when I submit the form.

The Image Checkbox Widget only lets you add the image and view it on the front end. When you receive it, only the labels or image texts would appear. For example:

And I've fixed your form notification email - added the widget tags there.

Now, one last thing, is there a way for the labels to be invisible? 

The Lable property is set to "Disable" but they are visible..
